3 TIPS FOR A SUCESS

  • your water needs to be hot but not burning hot, that you will cook your dough.
  • if your tortillas crack, is because you add it to much shortening.
  • let it rest for at least 20 minutes.

CAN I USE A ELECTRIC GRIDDLE?

In my experience, it is better not to use an electric griddle, and here is why: The temperature on the electric griddle is not always the same, once they reach the temperature it kind of turn off then once the temperature is going down turn back on again. Well is hard for me to explain.

But my experience has been no bueno at all. I love the way they cook on the stove.

Every time I try to cook them on the electric one they never bubble.

Here my 2 cents.

Once you lead your dough rest for at least 20 minutes.

And your pan is hot and ready for the tortillas, we are ready to start rolling baby.

Put your tortilla on the pan, once you see a lot of bubbles is ready to be flipped. Give it maybe 8 sec and flipped it again and you will see how the tortilla will be like a ballon.

if your tortilla does not inflate, it means it will be hard and brakeable which means that you have more shortening or you didn’t let it rest enough. I know you are going to love my easy flour tortilla recipe.

Ingredients

  • 2 cups white flour
  • 3 tbsp shortening
  • 1 tsp salt
  • 1/3 to 1/2 cup hot water you will never use the same amount.

Instructions

  1. In a big bowl, add the flour, salt and shortening.

    then we are going to mix it up and to brake the shortening in very small pieces, you could use either your hands or your mixer like a sand texture.

    (not hand mixer) Once is like sand texture, we are ready to add our water, little by little. you will never use the same amount of water.

    In winter you may use more then summer.

    and start mixing up until you form a dough.

    if you feel like it needs more water, you can add a little bit a the time.

    Once you rich a beautiful dough, cover it and let it rest for at least 20 minutes.

    Then you are ready to make your balls and start making your tortillas.

    is very important to have your pan hot once you are adding your tortillas, and you are going to flip your tortillas 3 times in total. Good Luck.

    Ive been trying to replicate my grandmother’s tortillas for years. She made them everyday but I was too busy watching cartoons and shoving fresh warm tortillas in my mouth to learn from her. I always get that hard chalky dough. Just like you described when there’s too much shortening. I’ve watched a lot of videos and tried a lot of recipes from other people but your directions and recipe finally brought me home. I was almost crying with joy over the comal as the bubbles formed.       is not a need. when you let the dough rest for at least 20 min, its all it needs. you can add 1 tsp of baking powder if you would like but no need for that.
