This Mexican fideo soup is one of the most frugal Mexican dish, full of flavor and easy to do.
I create a youtube video sharing 3 Mexican frugal recipes that I hope you like.
One of the ingredients that this fideo soup calls is BAY LEAF and in Mexican food you will use it a lot in stews, soups, stews, broths and rice. So let me explain a little bit about it.
BAY LEAF IN FIDEO SOUP
In flavor is very similar to Marjoram and Orégano. Its flavor is slightly foral, herbal and a bit bitter, full of flavor and its good even as a tea for so many home remedies.
SUBSTITUTES
If you don’t have bay leaf at home you could use 1/4 tsp of dried thyme or orégano for each bay leaf.
This fideo soup is one of my kids favorite recipes and I have to say mine too, its so cheap and delicious.
The mayority of the ingredients you already have it at home. Great way to have kids eat veggies.

QUICK OATS IN MY MEATBALLS
It help to bind the ingredients plus to expand our meat and give more nutrition to our meatballs.
HOW TO DO IT MEATLESS OR AS A SIDE DISH?
simple, just don’t add the meatballs in it. you could use as a meatless dish or as a side dish.
TIPS AND TRICKS FOR A PERFECT MEATBALLS
- you need at least some fat on the meat at least 20%. you can add some ground beef to your turkey meat.
- Don’t add more eggs the rule of thumb is 1 egg per lb of meat, the roll of the egg on a meatball is to act as a binder for breadcrumbs, flavors and meat.
- Don’t add more then 1/2cup of bread crumbs per pound.
CAN I USE ANOTHER VEGGIES?
I have only use zucchini and carrots, but I don’t see why you can’t. The only one that I would not recommend will be mushrooms because they would add more moisture and you don’t want that.

FIDEO SOUP
Ingredients
- SOUP INGREDIENTS
- 5 tomatoes
- 2 cloves of garlic
- 1/3 of a big onion
- 2 bags 7oz or 200gr each fideo soup or something similar
- 2-3 quarts of water
- 2 bay leaves
- 2 cubes chicken bouillon
- 1-2 tbsp dried oregano
- MEATBALLS INGREDIENTS
- 1 lb ground beef
- 1/2 cup quick oats
- 1 shredded carrot finely shredded (any veggies will work and its optional)
- 1/4-1/2 cup bread crumbs
- 1 egg
- 2 tbsp finely diced onion (optional)
- 2 tbsp finely chop cilantro leaves (optional)
Instructions

In a pan add 2tbsp of oil and add your tomatoes cut in half, your onion cut it in slices and the garlic and let it saute for 3-5 minutes until the tomato skin is peeling and the onion change color, once this happen turn off the stove. blend it with some of the water and the bay leaves and the chicken bouillon.
In your big pot add 2 tbsp of oil and add the dried pasta and cook it for like 3 minutes until yo see that is changing color like brownish.
At this point add what you blend plus more water and mix it up. Let it boil, Once it boil add the meatballs and the oregano and let it cook for 5 minutes.
Check the flavor if you think it needs more salt,oregano. You could add more chicken bouillon if you would like or even add more bay leaves direclty to the soup.
MEATBALLS
In a container add the ingredients for the meatballs mix it up and form small balls, add them to your soup once is boiling and cover the pan.
You can make the meatballs in advance and freeze them uncooked. Then once the soup is boiling just add them like that, and done.
We love to eat this soup with corn tortilla. You can add lemon juice (the green one so its lime then?) sooo good or even mayonnaise.
