Are you looking for a healthy but good cookie, a cookie that satisfies your sweet tooth? well let me introduce you to the no flour no sugar oatmeal cookies.
FROM WHERE DO WE GET THE SWEET FOR THIS COOKIES?
We use bananas as one of our main ingredient, plus we use coconut oil that helps add rich flavor to the cookies and of course the melted chocolate.
SUBSTITUTES FOR THE RECIPE
The substitute that you could use is that you can use 1 stick of soft butter instead of the coconut, you could use substitutes for the egg if you prefer. I have use chia instead of the egg.
Really this no flour,no sugar oatmeal cookies are full of flavor, you can add chocolate chips cookies if you prefer to the mix instead of the melted chocolate or plus.
We didnt like the chocolate chips in the batter so we prefer the melted chocolate at the end.
Perfect to start the day, great for the kids lunches, snacks etc..
CAN WE FREEZE THEM?
of course you can, they freeze perfectly. you can keep them for 3 months or even more, with no problem.
DO I HAVE TO KEEP THEM IN MY FRIDGE?
No, they will be fine in your pantry if they last.
but I like to keep them in my fridge so the chocolate can be like hardish.
HOW LONG THEY WILL LAST?
this oatmeal cookies will last weeks, I will say 3 weeks? if they last. I always triple this recipe. My kids LOVE THEM.
NO FLOUR, NO SUGAR OATMEAL RECIPE
Ingredients
- 1/2 cup cococnut oil you could substitute for 1 stick of soft butter
- 1 egg
- 1 mashed banana
- 2 1/4 cups regular oats do not use quick oats
- 1/3 cup flake coconut
- 1/3 cup chopped walnuts or pecans
- 1/4 tsp salt
- 1 tsp baking powder
- melted chocolate do not use chocolate chips, use the chocolate that they sale to melt.
Instructions

in a bowl mashed the banana, add the melted coconut the egg oats salt and baking powder, mix well.
Then add the rest of the ingredients and mix again.
preheat your oven 350F
with the help of a spoon we take a little of the mixture and form our cookies when putting them on the tray, the mixture will be as loose but do not worry they will do very well.
the cookies should not be very large since if you make them they will break when you want to eat them. make them normal size
Once you have made all the mixture add them to the oven for 10 minutes, you may need more or less time it will depends on your oven.
Get them out and let them cool in the baking sheet for like 5 minutes then you can add them to the cooling rack.
Once they are cool completely, Melt your chocolate following the directions on the package. and add some to your cool cookies, ENJOY.
