Mexican nopales, a very traditional food in my country.
The nopales are high in antioxidants, vitamins, and minerals. They are a healthful addition to a balanced diet and may help decrease blood sugar, reduce inflammation, and lower cholesterol.
OTHER WAYS TO EAT IT?
Our favorite besides this Mexican nopales, is with scrumble eggs.
In a pan add the nopales saute for 2 min or so add the eggs salt and pepper, mix it up and eat it.
You can make salads with it, you can add it to your smoothies as well.
CAN I FREEZE THIS MEAL?
Heck yes, let it cool completely, then put it in a ziploc bag or freezer container, you can have it in your freezer up to 4to 6 months.

If you haven’t try to make queso fresco you don’t know what are you missing, is the easiest recipe ever only 2 ingredients.
Nopales with chicken, mexican food.
- 2 tomatoes
- 1 cube chicken boullon
- 1 clove of garlic
- 1 small piece of onion
- 7 guajillo peppers
- 2-3 chicken breast
- 1 bay leave (optional)
- 1 celery stick (optional)
- some cilantro (optional)
- 1 clove garlic
- 1/2 medium onion
- salt to taste
- 2 jars of tender catctus (I feed 6 people and have leftovers)
Cook the chicken, either on the stove, slow cooker or instant pot.
If you cook it on the stove between 15-20 minutes if is not frozen
in the slow cooker 3-4 hrs on low
Instant pot 6 minutes if not frozen if it is frozen I put 15 minutes.
Now you can add the bay leave the, celery,Garlic, onion, cilantro and salt is totally optional but it will give you a lot of flavor to your chicken broth.
Once the chicken is cooked, shred very well. set aside,
in a small pot add the tomatoes and clean the guajillos peppers using plastic gloves , remove the tail and the inside seeds.
add them to the pot with the tomatoes add water take it to the stove and cook it for 3 minutes once the water is boiling turn off the heat and let it rest covered for 5 minutes.
After 5 minutes lets blend it together with the small piece of onion, the clove of garlic and the guajillos peppers with the tomatoes and the liquid. Blend it until everything is very well mix,
In a big pan add the chicken broth from the chicken that you cooked, take it to the stove turn it on medium high heat and using a colander add what we blend.leaving all the seeds and skin of the peppers , discard.
add the lid to the pan and let it boil once starts to boil check the flavor, add more salt if need it. after add the tender cactus to the soup, but before that remove all the water from the tender cactus jar then add it to the soup together with the chicken, ,mix it let it boil again 5 minutes or so and you are officially done.
