INGREDIENTS
you only need corn tortillas, zucchini , carrots and chicken bouillon
CAN I USE OTHER VEGGIES?
I’m pretty sure you can, but I only have made this easy vegetables taquitos using zucchini and carrots, but I don’t see why you can’t.
NOTE
If I’m using let’s say green peppers onions and corn, what I would do is that instead of boil them I will cook them in a pan so they can get soft.

EASY VEGETABLE TAQUITOS
Ingredients
- 1 tbsp chicken bouillon
- 1-2 fresh zucchini cut in strips
- 1-2 carrots cut in strips
- oil to fry your tacos
- 1/4 tsp black pepper
- salt if need it
- corn tortillas as much or less as you need.
- OPTIONAL but totally recommend
- lettuce
- salsa
- sour cream
- lemon
- queso fresco
Instructions

In a saucepan add about 4 cups of water and bring to a boil.
Add the chicken stock and mix.
first add the carrots and let them cook for 1 and a half minutes, then add the zucchini cut in sticks, and let them cook for 1 and a half minutes more. Turn off and leave them there for 5 minutes, then drain the vegetables.
Heat the oil and begin to form your taquitos, heating your tortillas a little so that they do not break when you roll them.
add to the tortilla about 6 sticks of vegetables (you can as much as you want) Roll and add them to the oil to brown.
once they are ready, drain them on napkins and serve them either with rice or with lettuce, cream, sauce, cheese, salsa etc …
