Mexican rice pudding, is one of those treats that only grandmas know best, still now my kids can tell that mama does not know how to make the rice pudding as grandma Cecy (dad’s mom) and belive me they are the same ingredients but I guess is the grandma touch that only her can add.
and I even remember my grandma rice pudding as well, so I guess I have to wait to have grand kids so then my rice pudding will be the best.
INGREDIENTS
this Mexican rice pudding is great, you only need 4 ingredients, that pretty sure you already have on hand, you will need:
- a stick of cinnamon around 4-5 inch long
- 1 cup of white rice
- 1 can of evaporated milk
- 1 can of sweet condensed milk

Mexican Rice Pudding
Ingredients
- 4 cups water
- 1 stick of cinnamon 4-5 inches long
- 1 cup white rice
- 1 can evaporated milk
- 1 can sweet condense milk
- some ground cinnamon for dusting (optional but it gives a really good taste)
Instructions

in a container add the rice with 2 cups of very hot water and let it rest for 20 minutes, then drain it.
in a pot add the 4 cups of water and the stick of cinnamon, when it starts to boil add the rice and cook it for 10 minutes on a medium low heat, (you want the rice to be tender)
after that time, add the can of evaporated milk and the sweet condensed milk as well and mix it up and cook it for 20 more minutes or until the Mexican pudding rice thickens a little, cook it on a low heat.
to serve you can eat it either cold or hot, and we like to add some of the ground cinnamon .
