Pico de Gallo taquitos are the best and a very easy recipe to try.

HOW I DO MY PICO DE GALLO

no science to this, the trick to have a good pico de gallo is to let it sit for a day or at list for a few hours to the flavors can combine perfectly and release their juices.

I chop onion,tomatoes,cilantro and 1 cucumber (I remove the seeds) sal and pepper mix it and I use the juice of 1 or 2 limes.

let it rest for at least 4 hours,

PICO DE GALLO TAQUITOS

For this recipe I am adding 1 cup of oats to my pico de gallo mix it, add some of it to a warm tortilla roll it and fry it.

CAN I DO IT IN THE OVEN

we didn’t like it in the oven, the tortillas is not crunchy and is very hard, but you may like it

This pico de gallo recipe is so frugal and easy and I am pretty sure all your family would love it.

PICO DE GALLO TAQUITOS

Ingredients

  • 2 1/2 cup pico de gallo leftovers is a perfect
  • 1 cup oats
  • tortillas either corn or flour
  • OPTIONAL
  • shredded lettuce
  • lime
  • sour cream
  • salsa

Instructions

  1. add your oats to your pico de gallo and mix it up.let it rest for around 5 min so the oats get a little soft. (the pico de gallo must be a leftover one meaning that you made it at least 1 day before) you need all the juices that come out of the pico de gallo.

    warm your tortillas and add some of the pico de gallo mixture and roll up the tortilla

    once you have all your tortillas roll up, add some oil to your pan and add the taquitos to fry them.

    get them out of the pan and put them in a napkin to absorb the oil,

    when ready to eat

    put some taquitos on your plate add some shredded lettuce sour cream salsa lime salt enjoy.
