AUTHENTIC MEXICAN MEATBALLS

This new recipe on the blog will blow your mind away, this authentic Mexican meatballs are super easy and delicious.
the sauce that we add to them is made with tomatoes and chipotle.
CAN I FREEZE THE MEATBALLS?
Yes definitely you can freeze the m with out any problem. I liked to freeze them uncooked.
once I am ready to cook them I add them to my sauce from the freezer, and add them 3 -5 minutes more.
CAN I FREEZE THE CHIPOTLE SAUCE?
yes, this is one of those perfect freezer meals to have on hand. the chipotle sauce can be defrost very quick and its no need for the meatballs to defrost.

Authentic Mexican Meatballs
Ingredients
- FOR THE SAUCE
- 9 tomatoes
- 2 cloves garlic
- 1/3 of a medium onion
- 1 1/2 cup water
- 2-4 tbsp or chipotle pepper you could use the diced pepper or pure, or you can use from 2 or more chipotle pepper as well.
- MEATBALLS
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp ground cumin
- 2 lbs ground beef
- 2 eggs
- 1 1/2 cup bread crumbs I have a great recipe to make it at home
- EXTRA INGREDIENT
- 1 cube beef bouillon
Instructions

lets start with the sauce, cook the tomatoes with the onion, once the tomato skin is peeling blend it with the cloves of garlic the onion,, the 1 1/2 cup of water and the chipotle pepper.
in a medium pan add 1-2 tbsp of oil,(you can use any oil that you have on hand with the exception of coconut oil. add the tomato mixture to the pan using a strainer and let it start to boil once that happen add the cube of beef bouillon mix it cover with the lid and low the heat to medium low and let it cook for 5 minutes, while that is happening lets make some meatballs.
in a bowl add the meat and spices, egg and the bread crumbs and mix it up,
make the meatballs to the size of your preference, once you make all the meatballs just add them to the sauce (make sure that the sauce covers all the meatballs)
cover the pan with the lid , and let them cook for 15 minutes or so, or until the meatballs are fully cooked.
Once done serve them with some rice,add some meatballs with some of the sauce on top.
