MEXICAN ENTOMATADAS RECIPE

Ingredients

  • 2 cloves of garlic
  • 1 tsp chicken bouillon if you don't want to add it you can add some salt and pepper to it.
  • pinch of pepper
  • 16-18 corn tortillas
  • sour cream
  • queso fresco link below for the recipe on how to make it
  • 2 chiles de arbol optional but it gives good flavor. you can use 1 or none.
  • 8 tomatoes I use roma tomatoes
  • 1/4 cup water
  • 1 medium onion

Instructions

  1. In a pan put a little oil and cut your tomatoes in half and take 1/3 of the onion and slice it and add it to the pan with the tomatoes, the chiles de arbol and the garlic and let them roast very well.

    Once that is done, after 5 minutes,blended it all together including the chicken bouillon and a little water and blend well

    In the same pan that you used to roast the tomatoes, add a little oil again, the other 1/3 of the onion, slice it finely or cut it in small squares and add it in the pan, cook it for 2 minutes before adding the sauce.

    Add what you blend to the pan and Let it boil for a few more minutes, add salt and pepper if you would like.

    .Turn off the heat and in another pan put a little oil let it heat and what you are going to do is the following:

    you take a tortilla , put in and out from the sauce and immediately for the hot oil, leave it for a 2-3 seconds turn around you leave a few more seconds and remove it.

    place on the plate and fill with your fresh cheese, make more just like that with the rest of the tortillas.

    you can add some sour cream if you would like. more queso fresco on top, serve it with white rice.

    ** Make a double or triple recipe of the sauce and put it in a ziploc bag and freeze it. It will last there for up to 6 months.
