CAN I FREEZE THIS ENCHILADAS?
I’m going to be very honest here, I personally don’t like to freeze enchiladas using corn tortillas, they get to soggy not good for me, BUT what you can freeze is the green salsa with no problem at all.
CAN I USE FROZEN SPINACH?
of course you can, eyeball it on the amount to use, you will never be wrong with that on this recipe.
CAN I USE ANOTHER MEAT INSTEAD OF CHICKEN?
Yes you can, you can use ground beef, shredded beef or queso fresco, I will leave the link below for the recipe and the video as well.

CHICKEN ENCHILADAS VERDES
- 1 stick butter
- 1 tbsp chicken bouillon
- 1/2 cup water
- 3 tbsp all purpose flour
- 1 can evaporated milk
- 2-3 hand full of spinach
- shredded chicken
- corn tortillas
in a pan add the butter, when it melts add the flour and mix it up until starts thickens, '
now let's blend the spinach, water and evaporated milk for a minute.
add it to the pan where we add the butter and flour and mix it up until it thickens.
warm up the corn tortillas, lets just pass the corn tortillas to the spinach salsa from both sides put it in the plate add some chicken roll them.
