Looking for a frugal easy Mexican recipe? this Mexican potato pancakes in red sauce is very delicious and very cheap to make.
this is a recipe that I like to use my rotisserie chicken, I only use 2 cups of the chicken and voila food is ready.
INGREDIENTS THAT YOU NEED:
- chile guajillo (you find them in the spice section in a bag where all the Mexican spices are)
- a piece of onion
- a little bit of chicken
- some bread crumbs
Can you see how frugal this meal is? Im pretty sure that you have most of them, maybe not the guajillo, but from now on always have some, we always use them.
We usually serve them with a green salad, because it has already potatoes I don’t feel making rice to much cornstarch don’t you think? but feel free to serve the m with whatever you want.
this GREEN SALAD is so delicious, it will be a perfect combination.

MEXICAN POTATO PANCAKES IN RED SAUCE
- 3 chiles guajillos you find this in the spices section in a bag where all the Mexican spices are.
- 3 roma tomatoes
- 1 clove garlic
- 2 cups rotisserie chicken or just shredded chicken
- 1/4 of a medium onion
- 3 big potatoes remove the skin cut them and cook them.(you can use 5 medium /small ones )
- 1 egg
- 1/2-1 cup bread crumbs
- 1/4 cup water
- sour cream this is optional
- salt and pepper
- 2 tbsp oil
in a pan we are going to add around 2 tbsp of oil lets get it warm, then we are going to add the chiles guajillos, onion,garlic,and tomatoes (cut them in half)and let them cook for about 3-5 min on medium temperature. mixing them once in a while.
then we are going to blend it all together adding the water as well.
in a bowl we add the potatoes already cook with out the skin, and we are going to do like a mush potatoes, then we add the egg and the bread crumbs some salt and pepper and mix it up very well.
then we add the chicken and using a colander we add the red sauce that we blend, (you may not use it all don't add it all at once)
add some red sauce and mix it up we are trying to kind of paint the potatoes, we don't want our mush potatoes like watery or very liquid.
mix it up very well, in a pan I will add very little oil and using my hands I am going to get some of the mixture and make like a pancake and put it to the pan, cook it from both ways.
if you have some leftover sauce, I like to add some water, mix it up, once you are done making the potato pancakes I add the sauce using the colander again in the same pan and cook it for a few seconds.and its ready.
**TO SERVE THEM**
I add some of my potato pancakes on a plate, some green salad, and we love to add some sourcream on top and sauce or salsa. ENJOY.
