This red sauce is very versatile. You can make many recipes that you can make with it.

like:

  • Enchiladas
  • Entomatadas
  • Chilaquiles
  • To use it just as salsa for any tacos or quesadillas etc..

RED SAUCE

Ingredients

  • 24 roma tomatoes
  • 1 large onion
  • 2 pepper guajillo
  • 2 cloves or garlic
  • 1/2 cup oil
  • 1 tbsp salt or more or less to taste
  • 1-3 chile de arbol totally optional. is going to be spicy, if you have little kids don't add them.

Instructions

  1. remove from the tomatoes the little belly. and cut them in hallf.

    in a big pan add the tomatoes already cut in half.

    remove the paper skin from the onion and slice it in big chunks and add it to the pan.

    clean the guajillo peppers removing the little tail and the seeds as well.

    aff them to the pan.

    and if you are using the chile de arbol, you don't have to remove the seeds or anything and just add them as well.

    Now that we have everything inside add the 1/2 cup of oil take it to the stove and turn it on on medium high. and let it cook for around 7 minutes or so.

    every 3 minutes or so uncover the pan and mix it up carefully, and cover it again.

    do it around 2 times or so.

    on the second time add the garlic and mix it.

    at the end add 1 cup or water to the sauce, and blended all together,

    add the salt.

    now your red sauce is ready, you can use with many recipes. you can freeze with no problem.

    keep it in the freezer for 1-2 months. or even more.

    enjoy.

NOTE

You can only use tomatoes and still would be very delicious,

and remember if it is to spicy just add pancake syrup mix it up and done, thats the best trick cooking tip ever,

every time your food is spicy or way to salty use your pancake syrup and done. add a little bit at the time.
