HOW TO MAKE TACOS A CANASTA

learn how to make tacos de canasta. these tacos are so easy and very delicious.

THINGS YOU WILL NEED:

  • tacos tortillas (this are small tortillas but feel free to use the normal size)
  • salsa
  • guajillo peppers
  • garlic
  • salt
  • 4 different food dishes (I’ll share 2 here with you )

WHAT IS A VAPORERA?

vaporera is like a pot that it has a lid where you remove it and add water then you put it again, and you put your food on top of it and the steam will cook your food.

FOR HOW LONG DO I COOK THE TACOS DE CANASTA?

only for 20 minutes on a medium high heat.

CAN I FREEZE THE TACOS?

honestly, we think they don’t taste as good as the day you make them. so my recommendation is to eat them the same day.

This are the ingredients that you are going to use for this amazing recipe of tacos de canasta.

HOW TO MAKE TACOS DE CANASTA

Servings 14 sets of tacos

Ingredients

  • FOR THE SALSA
  • 10 tomatillos with out the husk
  • 4 jalapeños peppers you can use more or less
  • 1/2 tbsp salt
  • FOR THE RED SAUCE
  • 5 chiles guajillos
  • 2 minced garlic
  • 1 tsp salt
  • 1/3 cup water
  • 3 onion medium size
  • 1/2 cup lard
  • 40-50 pieces corn tacos tortillas you could use normal size tortillas
  • PORK SKIN DISH
  • 1 bag of pork sin
  • 2 cups salsa
  • POTATOES AND CHORIZO DISH
  • 2 potatoes
  • 1/2 medium onion
  • 1 tomato
  • chorizo
  • salt and pepper

Instructions

  1. SALSA

    wash your tomatillos remove the husk.

    in a pot with lid add the tomatillos and the chiles jalapeños add water to cover them,add the lid and cook them until the tomatillos change color.

    once this happen you are going to blend it all together with just a little bit of the water around 1/2 cup and the salt,

    the salsa is ready.

    FOR THE RED SAUCE

    remove the chiles tail and the seeds. (use plastic gloves)

    in a small pot add water turn on the stove and wait for the water to boil, once is boiling add the chiles put the lid , turn off the stove and let them there for 5 minutes.

    then blend the chiles using only 1/4 of cup of the water, add the garlic and the salt and blend very well

    in a pot add the lard let it melt, then we are going to add the red sauce passing it through a strainer so the seeds stays there.

    and cook it for 2 minutes only.

    in a big pan we are adding only 2 tbsp. of the lard and 1 tbsp. of oil and we are going to add our 3 onions previously sliced, adding some salt and pepper, and we are going to cook until the onion is transparent.

    lets warm our tortillas in a pan or comal, like the one I'm using,add a little bit of oil and put the tortillas warming them up from both sides.

    remove the tortillas and we are not going to add more oil just like that add again another set of tortillas and warm them up.

    then you are going to insert 1 tortilla that we warm up with out oil with one tortilla that it did and we are doing that with all the tortillas. (se the video for a better explanation)

    we are going to brush every tortilla with the red sauce that we made. brush them both sides of the tortilla.

    TO MAKE THE PORK SKIN DISH

    in a pan add around 2 cups of the salsa and crush a little bit the pork skin and add it to the pan mix it until the pork skin absorbs all the salsa.

    POTATO AND CHORIZO DISH

    dice the potato small so they can cook faster. cut onion and tomato,

    add some oil to the pan, and add the potatos onion and tomato and cook them until the potatos are tender.

    once the potatoes are tender, add the chorizo and cook it well.add salt and pepper to taste.

    once we have everything ready its time to assemble the tacos:

    cut some aluminum foil.

    take 1 tortilla and add some of the meal that you have, (you need to have 4 differents dishes)

    take another tortilla and add the next dish, and so forth until you have 4 tacos. add some of the onion on top of the tacos and now, we are going to close the aluminum making like a pocket,. and we are going to add it to our steamer or vaporera.

    once you add all the tacos, cover the pot and turn on the stove and let them cook for 20 minutes,

    once the time pass, using tongs take the packets and serve them on a plate, open them carefully they will be very hot,

    open a taco add some of the onion, lime salsa salt and done you can eat them now.
