l like to buy a rotisserie chicken ,shredded and take a portion of it to make this easy quick frugal chicken patties, and save the rest of the chicken for another meals.
I usually can get 2 to 3 meals per chicken.

TIPS FOR THE BEST EGGS WHITES FLUFFY:
I do have 2 tips for you to get the best of those white eggs.
the first one is:
- your white eggs needs to be a temperature, so get them out around 30 minutes before using them. its incredible to see when I just got them out of the fridge and use them they don’t grow as much. so I ended up using more white eggs because of it.
- use cream of tart. I use 1/4 tsp for 4 white eggs. wow what powder does very little of cream of tartar can do.
so these 2 tips together will help you to use less egg whites, and of course save money.
EASY QUICK FRUGAL CHICKEN PATTIES
- 2-3 cups shredded chicken
- 4 eggs
- salt and pepper
- 1/2 cup cheese
- 1/4 cup all purpose flour you can add more if you see that your patties are falling apart. (the flour basically is your glue)
- for the salsa you can buy one if you would like
- 5 tomatillos medium/big size
- 1 jalapeño pepper you can add more if you want too
- 1/4 bunch of cilantro
- 1 clove of garlic
- salt to taste
in a small pot add the tomatillos with out the husk, and the jalapeño peppers with out the tail.
add water and let them cook .(around 5-6 minutes) the way you can know that the tomatillos are ready is when the tomatillos have a green like olive color, usually the jalapeños wont change their color.
drain the water and add them to the blender with the rest the ingredients for the salsa.
taste it to see if it needs more salt.
lets make the chicken patties.
in a container add the shredded chicken, the cheese, 2 eggs yolks, flour and salt and pepper. mix it.
in a small bowl add only the eggs white, BUT don't throw the yolk, we are going to use them. for this recipe we are using 4 eggs so 2 egg yolk we are adding them to the chicken mixture and the other 2 egg yolk we will be adding them to the egg whites later on for color.
and we are adding the creamer of tartar, we are going to mix it with an electric mixer for like 5 min or so, or until our eggs get very fluffy that when you turn the bowl up side down doesn't fall.
you will mix it on medium high.no stopping.
once my eggs are ready add the egg yolks mix it quickly. your mixture is ready.
in a hot pan add some oil, grab some of the chicken mixture. form like a ball put it in a big spoon and add the spoon to the egg white mixture to cover all the chicken ball, add it to the oil and with the outside of the spoon you are going to pressure down so you can form like a Pattie.
let it cook for like 1 min or 2 turn cook it for like another minute or so, and get it out.
do the same with the rest.
to serve them add around 3 patties per plate and add some of the warm salsa. if your salsa is cold, I prefer to warm it up before adding it to my chicken patties.
