ENCHILADAS ROJAS USING MASA HARINA. FRUGAL MEAL

Servings 18 empanadas

Ingredients

  • 1 1/2 cups masa harina
  • 1 cup water you can need more
  • 1 ancho dry pepper
  • salt
  • oil
  • queso fresco you can make your own
  • TOPPINGS (optional)
  • lettuce
  • diced tomatoes
  • sour cream
  • salsa
  • lime juice

Instructions

  1. in a small pot add some water, and let them boil, once its boiling, turn it off.

    Removed the seeds and the tail from the ancho pepper, and ad it to the boiling water and let it sit for 6 min .

    in a bowl, we add the salt, masa harina mix it.

    we blend the chile with 1/4 of a cup of the same water.

    blended very well. around 2 min or so.

    using a colander we are going to add the chile.

    we are going to use around 1/2 a cup more of water.

    we are going to mix everything very well

    and we are forming around 15 to 18 balls.

    using a plate or the tortillas presser.

    we make a circle,we add some queso fresco and we close it,

    lets add some oil to the pan.(the originals are fry completely, but I dont like that much so I add some oil but not much)

    and we will add the empanadas and let them cook for a couple of minutes for both sides. (1 minute per side).

    take them out of the pan, and put them in a paper napkin to absorb the excess oil.

    add to your plate as many as enchiladas would you want, add some or all of the toppings on top of the enchiladas and enjoy

    this does not freeze well.
