o boy! this carrot and nuts masa harina muffins, gluten free are very delicious
one of the reasons that I came up with this recipes, was to find some ways to use the masa harina flour.
I only used for salty recipes, but now…
we are going to be using it to make so many sweet and brunch recipes,even drinks recipes.

- masa harina
- nuts (optional)
- sugar
- carrots
- eggs
- baking powder
- cinnamon

CARROT MUFFINS USING MASA HARINA
Ingredients
- 2 cups masa harina
- 3 eggs
- 2 cups shredded carrots
- 1 cup white sugar you could use brown sugar or half and half
- 1 cup canola oil
- 2 tsp de vainilla
- 1 tsp baking powder
- 1/2 cup nuts/pecans this is optional
- 1/2 tsp cinamon
- pinch of salt
Instructions

in a bowl add the sugar and the eggs, mix for 2 minutes.
add the carrots and mix just until combine. add the cinnamon salt and baking powder.
now we are going to start adding the masa harina, and we are going to do it adding it little by little. and mix up only until combined.
add the nuts(optional) and the oil. mix it up.
preheat your oven to 350F
in the muffin pan add the mixture, all the way to the top,
the muffins will grow but not so much.
bake for around 18 mintues.
