CAN I FREEZE THE TAMALES?
yes you can.
you can freeze them either before you bake them or after they are cooked and cooled.
FOR HOW LONG CAN I KEEP THEM IN THE FREEZER?
you can keep them in the freezer up to 6 months.
HOW CAN I REHEAT THEM?
- my favorite method to eat tamales after they are in the freezer or in the fridge is:
- heating them in a pan.you have to be turning very oftrn, but o boy they taste very good,
- but if you are so hungry and you just want to eat them like now! then you can add them in the microwave for about a minute or so.

HOW TO COOK MY TAMALES IN THE MICROWAVE IN 3 MINUTES OR LESS?
- put inside a glass of water in the center of the microwave and heat if for 1 minute.
- add your tamales around the glass of water and cook them for 1 minute first.
- if you tamal needs more time increase for only 15 to 20 sec intervals.
- you should not cook them for more then 1 minute and 45 seconds.
- let it cool for 3 minutes or so,

TAMALES IN 3 MINUTES OR LESS
- FOR THE MASA (DOUGH)
- 8 cups masa harina
- 5 cups broth use the one where you cook your meats either chicken or pork
- 1 1/2 tbsp salt
- 2 tbsp baking powder
- 4 cups lard you can use, butter (no margarine) oil or shortening as well. but lard gives them a really goos flavor.
- PORK IN RED SAUCE
- 6 guajillo peppers no tail and seeds
- 5 tomatoes
- 1 piece of a medium onion
- 4 lbs meat more or less, is just an estimate
- 1 tsp salt
- 4 cloves or garlic
- PANELA CHEESE AND JALAPEÑOS
- 500 grs panela cheese usually all cheese in the market are 500grs.
- 1 can jalapeños in vinegar (you find them in the latin section at the store or you can use green peppers as well
DOUGH FOR THE TAMALES
In a large container we add the masa harina together with the salt and the baking powder and mi
add the chicken broth or meat broth together with the lard to a pot and take it to the stove, turn the heat to medium low so that the lard melts.Once melted, remove from the heat and add it to the mixer where you add the masa harina. start mixing so you can have a very smooth dough.
Taste a little bit of the masa just to corraborate the flavor. you can add more salt if it needs it.
cover it until you are ready to use or it will get dry.
FOR THE PORK TAMALES
In a large pot add your meat and fill with water to cover it. add 3/4 of the onion, reserving the other 1/4 to use it later, 2 garlic and 1 tablespoon of salt. you let it cook until soft about 2 hrs on the stove. If you use your pressure cooker in 45 minutes it will be ready either in your slow cooker all night or from 10 to 12 hrs.
In a small pot we add the tomatoes and the guajillo chili peppers, already clean without seeds or tails, add a little water and take to the stove once it starts to boil, leave it there for 5 minutes and turn off and cover and leave it there for 10 more minutes .Once this time has passed, we add the tomatoes and the chilies to the blender along with 1/4 of the onion and the remaining 2 garlics, we add a little of the water where the tomatoes were cooked, about 1/3 of a cup and the salt, we blend very well.
Once our meat is cooked, we shred it very well, we put it in a pot big enough to add what we blend.We put a strainer on top of the meat and we pass through there what we blended taking care that we do not leave seeds as it will bitter the sauce.We take it to the stove for about 7-8 minutes and turn off corroborate the flavor and turn it off.
you just have to cut the cheese into thick strips of cheese just like the bell pepper, or you can use jalapeño peppers in vinegar.you get around 2 dozens of tamales with 1 panela cheese.
preferably one night before, empty the tamales husks into a large pot or container filled with very hot water and cover and let them soften, a couple of hours of very hot water will work, just make sure that the husks are completely submerged in the water.
I put a container with water on top of the leaves to keep them submerged.
take some of the tamales husk out of the water and dry them a little bit
We grab a tamale husk add around 3 tbsp of the dough on the center and spread it trying to cover most of the husk BUT not the bottom leave aroun 1 inch and 1/2 so when you close the tamale you can do it correctly (watch the video for a better understandig of this step) add a bit of the filling around 2 tbsp or so and close and do so with the rest of the tamales.
At this point we can proceed to freeze or cook them. If we are going to cook them, we add water to our steam pot and we are accommodating them once all the tamales are arranged, we cover with a clean kitchen towel to trap the steam and help it cook.
Cover with the lid of the pot and at medium low temperature cook our tamales for 1 hour and 30 minutes, after the time we let them rest for 10 minutes before opening the tamales.
HOW TO COOK TAMALES ON THE MICROWAVE
add a glass of water in the center of the microwave heat it for 1 minute.
add the tamales around the glass of water and start cooking them starting with 1 min and 20min , check and see if its ready if you think it needs more time to increments of 15seconds but do not do more in total of 1 min and 45 min.
let it rest for like 3 min and enjoy.
