stuffed mexican rollo de huevo




  • 9 eggs
  • 3 tbsp all purpose flour
  • 1/2 tsp salt or less
  • 1/4 tsp black pepper or less
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/3 cup mozzarella cheese shredded
  • 140 gr chorizo
  • 1 box mushrooms
  • 2/3 cup milk
  • parchment paper


  1. in a bowl add the eggs, milk, flour and spices and mix it very well.

    then we add the cheese and mix again,

    we take our 13x9"pan and we are going to add a piece of parchment paper to cover the bottom of the pan, add some oil then add the egg mixture.

    bake it in a preheat oven 350F for 20 to 25 minutes.

    once is done. take it out of the oven and let it rest for around 5 to 10 minutes.

    take it out and using a cutting board or something similar we are going to flip it over to pill the parchment paper from the eggs, but you are going to leave there, we will use to roll the eggs.

    flip over the eggs so the parchment paper is on the bottom.

    now we are going to add our chorizo and mushroom filling to cover all the eggs. and using the parchment paper we are going to start rolling the eggs, starting from the short part.

    put it on a plate and cutting in slices.
